Moimoi is a delicious, protein-packed bean pudding that has been a staple in West African cuisine for centuries. Its creamy texture and savory flavor make it a favorite, but making it the classic way takes some serious dedication:

That’s exactly how I felt the first time I tried the Moimoi Joy Kit—everything packed neatly in a tiny box, yet the result was unbelievably good!

The Moimoi Joy Kit already comes with bold flavors. To get the same taste as my childhood neighbors’_ I will refer to this as my “African-inspired recipe” packed with bold flavors!

Ingredients:

  • 1 Moimoi Joy Kit (all dry ingredients included)
  • 1 large spicy fresh pepper, diced (adjust heat to taste)
  • 1/2 medium white onion, finely chopped
  • 1 boneless smoked catfish steak, flaked
  • 1 Maggi cube, crumbled
  • 1 tsp Knorr chicken seasoning
  • 4 cups water

Instructions:

1. Prepare the Mixture

  • Empty the Moimoi Joy Kit into a large bowl.
  • Add the diced pepper, chopped onion, flaked catfish, crumbled Maggi cube, and Knorr seasoning.
  • Mix well to distribute the flavors evenly.

2. Fill the Pouches

  • Divide the mixture evenly among the pouches provided in the kit and seal them securely.

3. Cook Your Moimoi

Instant Pot Method:
  • Add the rack to your Instant Pot and pour in 4 cups of water.
  • Place the filled pouches on the steam tray.
  • Set to Pressure Cook (Normal) and cook on High Pressure for 15 minutes.
  • Let the pressure naturally release for 10 minutes before opening the lid.
Stovetop Method:
  • Follow the cooking instructions in the Moimoi Joy Kit, replacing the standard filling with this recipe’s flavorful twist.

4. Enjoy!

  • Carefully remove the pouches and let them cool slightly before opening.
  • Serve warm with bread, vegetables, or your favorite side dish.
