I made my first omelet when I was around eight years old. When I think of omelets, I picture Sunday breakfasts after church—cooked over a hot charcoal stove and made in big batches for my family of ten (or more, depending on how many visitors dropped by).

Eggs, onions, salt, and oil. Mix, fry in batches, flip, and plate. Simple, fresh, and fluffy—until I tasted a spicy version that changed everything.

This omelet, stuffed with coarsely chopped veggies, was a game-changer. The crunch of lightly cooked onions, the fiery kick of habanero peppers, and the rich, bold flavors awakened my taste buds. From that moment on, thanks to my father-in-law, I became an omelet snob for life.

  • Keep the heat at medium—too hot, and you’ll have a runny center.
  • When the edges start to brown, it’s time to fold.
  • Fold about ⅓ of the omelet inward and let it set for a moment.
  • Beginners: Fold from one end to the center.
  • Pros: Continue folding from the center over for a more compact omelet.
  • Flip carefully to cook the other side until golden brown.

The Best Hack for Salting Your Eggs

How much salt is just right? Here’s my trick: sprinkle salt directly onto each egg yolk before whisking. I’ve found this method gives the perfect balance of seasoning.

My father-in-law never cooked with measurements, and neither do I. Cooking is all about feeling the right amount, trusting the process, and paying attention to the textures, sounds and smells. 


What to Serve with Your Omelet?

The million-dollar question with the simplest answer: anything and everything!
